Sailor’s Rum-Glazed Ham

This Pineapple, Coconut and Rum Glazed Ham is a fun twist on the classic Christmas lunch staple. Recipe courtesy of Drunken Sailor Canning Co.

Ingredients

1/2 leg ham

1 jar Drunken Sailor Pineapple, Coconut & Rum Jam

1 table spoon ground cinnamon

3/4 cup of brown sugar

1 1/2 cups of Rum

Method

Pre-heat the oven to 200 C.

Blend the Drunken Sailor Pineapple, Coconut & Rum Jam with the Rum until it becomes a smooth sticky spread.

Prepare the ham by lifting off the skin but leaving the fat. Diamond cut the fat.

Spread the cinnamon over the fat.

Spread two thirds of the pineapple glaze over the ham (keep the rest for basting when cooking)

Once the ham is spread with the apricot glaze, press the brown sugar over the whole top of the ham and make sure the sugar gets into the diamond cuts.

With the ham in the roasting dish on a rack, add three quarters of an inch of water and cook for one and a half hours on 200 C, basting with the remaining glaze from time to time.- careful not to burn.
